Australian Wedding Banquet

Australian Wedding Banquet: today your menu will almost certainly have an international flavour to it utilizing the wonderful fresh produce that is bountiful in Australia. Here is an instance whereby a country’s cuisine has not been influenced so much by the climate and geography, but by the populous. The native Australians, Aboriginals, have a language, culture and cuisine of their own, the latter known as Bush Tucker. But, it was the migrants from all over Europe who brought with them their homelands cuisines who have had the greatest impact adapting native seeds, nuts, berries, tubers, and wild life into various dishes.

Authentic Australian Fare:

Your Australian wedding banquet may include some of the following ingredients or dishes:

- “Akudjura”, a bush tomato, also called “desert raising”
- “Bunya nuts”, nuts from the Bunya tree
- “Bugs”, large freshwater prawn - “Damper”, bread made without yeast cooked over a camp fire
- “Dukkah”, dip made from macadamia oil with ground native nuts and seeds
- “Lemon myrtle”, fresh leaf, ground dried leaf, or oil
- “Macadamia nuts”, nuts from the Macadamia tree, either eaten whole, ground to put in dishes, or turned into oil
- “Mountain pepper”, ground leaf or berries of the mountain pepper tree
- “Native spinach”, warrugul greens
- “Paperbark”, papery bark from a native tree
- “Quandong”, native Australian peach
- “Riberry”, sharp, fruity tasting berry
- “Wattle seed”, very versatile, whole, ground, etc.
- “Wild fruits”, e.g. wild limes and wild plums
- “Yabbies”, small cray water fish

Australian Wedding Banquet:

Today, as majority of the population live on, or within easy reach of, the coast a formal Australian wedding banquet will usually have a heavy fish influence. Here are some ideas you may wish to consider:


Appetisers/Entrees:

Tasmanian Salmon, or Trout, roulade

Of course there will be many who will wish to ignore a formal Australian wedding banquet in favour of something much more informal. Meat and fish may just as easily be cooked on the BBQ (barbie), first having marinated, rubbed or glazed, or coated them in a sauce, made from native herbs and spices. A favourite of mine at the moment is wild lime and chili.

To accompany your wedding banquet there is an array of fine Australian flat and sparkling wines on the market. You are sure to find one to suit your menu and your tastes, unless of course you are a “wowser” – tea totaller!
